I had a bunch of strawberries that were about to go bad and you just can't let those delicious berries go bad, so what's the solution? Make it into a delicious cocktail like a Strawberry Gin Smash Cocktail. If you like gin you'll love this drink, but I did a few tweaks to the recipe. Okay, I had to try a cocktail called Skull Smoker even though I'm not a super big beer fan, but tickle me intrigued. I've seen and even sampled a few sips of beer based cocktails (usually when my husband gets excited and orders the wrong thing on the cocktail menu without reading the description), so I decided to use the few beers I have left in the fridge for experimentation time! This Beachcomber cocktail recipe is adapted from the original Beachcomber that is printed in the Trader Vic's Bar-Tender (1947) book. Ingredients: 2 oz. Light rum 3/4 oz. Triple Sec 3/4 oz. Lime juice 2 dashes Maraschino liqueur 1/4 tsp. Simple syrup (optional) Method: You can blend ingredients with one cup of ice into a blender or shaken in a cocktail shaker and strained into a glass. I was a little concerned about this cocktail having so many ingredients as I don't normally drink cocktails that contain a mixture of liquors, but I was pleasantly surprised with the taste of the Miami Beach Iced Tea. The mix of subtle sweetness of the simple syrup combined with the tartness of the lemon juice makes this drink go down very easy and you will be wanting seconds. It's an interesting variation on the traditional Long Island Iced Tea with the color reminding me of the waters of South Beach. Oh to be laying on a beach right now. Sigh.......
