One of my husband and my favorite local eats is Cantina Loco which is not only a Tex-Mex restaurant, but they are a tequila bar. I love their pineapple ginger margarita, so we've been experimenting at home to try and create this wonderfully fruity and spicy cocktail. We think we got the proportions right and we'd like to share this tasty treat with you!
Ingredients:
2 oz Gold tequila
4 oz. Pineapple juice
2 oz. Ginger beer
1 oz. Triple sec
1 tsp. grated ginger
Method:
Combined tequila, pineapple juice, grated ginger and triple sec into cocktail shaker and shake. Strain mixture though a strainer (to strain out the grated ginger) into a margarita or highball glass and top with ginger beer.
