We bought a little basil plant at a local farmers market with the intention of having some fresh basil for cooking, but I also have been wanting to try some muddled basil cocktails like the Basil and Pineapple Martini. If you're thinking, "EW!!!", I was right there with you until I really started to enjoy muddling everything in sight as it unleases the fruit and/or herbs wonderful flavors.
4 parts Absolut Vodka
2 parts lemon juice
1 part simple syrup
1 piece of pineapple (I used fresh)
1 leaf basil (fresh would be best)
Muddle pineapple, basil and syrup in a shaker. Fill with ice cubes and add vodka and lemon juice. Shake and strained into a chilled cocktail glass. Garnish with basil.
