Cinco de Mayo or 'The Fifth of May' is right around the corner and it's a time to celebrate freedom with cocktails, friends, family and food. Though a traditional tequila margarita would have done the trick, a popular drink in Mexico, the Paloma Cocktail, is what I'm raising in honor of 'The Day of the Battle of Puebia' as remembered on Cinco de Mayo. Paloma is Spanish for "dove" which is symbol for peace, thus making this the perfect cocktail on this day of remembrance and celebration.

6 oz. Grapefruit soda (Squirt or Goya grapefruit soda)
1/2 oz. Lime juice
Salt for rim (optional)
